In regard to the model's ability to be used with another purpose than it's original design?

Well, if so I would certainly say the humble Skeleton is the clear winner here. Any army, Fantasy or 40k, can easily incorporate a skeletal corpse onto any conversion work.

Want that Tyranid Hive Tyrant to look even more ridiculously intimidating than it already is? Model a skeleton to the base, as if it was an Imperial Guardsmen who was the unlucky target of a bioacid attack.

Want that Khorne Knight to look like he knows how to use that sword of his? Add a skeleton skull to his steed's saddlebags as a trophy!

I would have to agree with the Inspector but also add the good old zombies fits in there as well. It can be used for all the above, plus just you can cut and chop the zombie itself in a variety of ways and it still looks good.

i feel the same way with Dwarf bits when helping my son with his Orcs.. nothing more satisfying then cutting off their heads to glue to a spear or to put under the foot of a hero

I find that a close second could be (regular) Warhammer goblins (not the 40k ripoffs). In my opinion they can pop up anywhere too, from skull trophies to scared gobloids. Furthermore, Goblins can give this humourous touch to a display (maybe Snotlings fit the bill a bit more, though).

My vote is for the old zombies. As a rough basic, you can add nearly anything humanoid to the mix and get a different unique variation of zombie. The only thing I wouldn't add would be lizardman parts, unless your creating a chaos unit thing.

Its one of the things I'm looking at doing with my empire horde. Trying to get the most out of one box of zombie bits, and x amount of empire bits. Even when you cut the zombie parts to a bare minimum, they still seem to add flavour to the unit, even if its just the occasional head or torn shirt and dragging leg.

It has to be the varghulf! You can make a vampire that has part turned into a giant bat, a giant bat which has partly turned into a vampire or last but certainly not least, a pretty convincing feral watermelon. The options are limitless, it's just amazing.

You know what? I think it's that running Peasant from the Giant box. While hard to get your hands on without getting the Giant in the bargain, I could think of sooooo many uses for that little guy.
