Okay, so this might be a bit early seeing how the book isn't out yet, but as soon as anyone finds an answer, please post.

With the rules in End Times Archaon removing all restrictions of army selection, in a 2000 point battle, what is keeping me (or my opponent) from simply picking a very huge unit of Grave Guard (roughly 200 miniatures big) and nothing else? not even a single character, no champion.

with killing blow, that unit would certainly kill at least something, and well, I find it unlikely that 200 heavily armoured Grave Guards would be killed in 6 turns. I would give up no points that game.

Or well... maybe if opponent picks a list of only wizard lords using Dwellers of Below..

Anyways. The possible lists are just silly?

yes they are....but in all fairness: if everyone can take everything, the odds has never been more even.

also: everything has a counter

You bring 200 GG ?
Meet my Slann with fiery convocation and his posse of Terradon riders.

while Unbound IS silly, it is not so you cant agree beforehand that you use the old system.
I know my gaming group will.

Put in one character with the Magic Resistance (3) talisman. 4+ ward vs. spells. Also, if you're using Khaine magic, getting off the high casting value spells (like Dwellers) is more difficult when you might not get to roll enough dice for it.

What if you face nothing but monstrous cav or monsters? KB will do nothing then although you will still be strength six...

Just take all light council high priests, wraiths and the largest two unit of zombies ever! What does that do?

Yeah, I guess what I was saying with the original post that the end times opens up for some really messy lists... whether optimal or not. oh well, guess it could be fun for some. Having a last go with just everything they got, without any restrictions in any way, now that the world has ended.

From the designer's comments, that's exactly the intent of these rules. And from what I can tell, that's exactly how they'll be used, in those cases where they're used at all.
